Chrissy Teigen's Famous Banana Bread
Chrissy Tegien once shared this banana bread recipe on Twitter before she released her second cookbook and Twitter went INSANE. People were raving about this banana bread recipe saying it was the best recipe they have ever had. So OBVIOUSLY I was excited to try it out. And gosh darnit they were right, it’s the best damn banana recipe you’ll ever have (ask my mother-in-law, she’ll tell ya). It is extremely moist with bits of chocolate and coconut throughout that will just blow your mind at every bite. It’s damn good, so go make it. Right freaking now.
NOTE: If bananas aren’t ripe enough (ya know, like black), you can ripen them in the oven. Cook them in the oven at 300 degrees on a lined baking sheet for 15-30 minutes. The bananas will leak to be careful when you take the pan out of the oven. Pay attention the entire time. The peel should be shiny and black when finished.
Step One: Preheat the oven to 325 degrees. Combine the mashed bananas, oil and eggs in a large bowl. In a separate bowl, combing the dry ingredients such as the flour, sugar, baking soda, salt and pudding mix. Add the dry ingredients to the wet ingredients and combine as well as possible, while being gentle. Do not use an electric mixer, it is too aggressive and will not come out the same. Fold in your chocolate chunks and shredded coconut.
Step Two: Grease the inside of your Bundt pan with oil and sprinkle some flour evenly all over. Turn over, and shake out any extra flour. Pour you batter into the pan. It can also make two 8 x 4 inch loaves, but the Bundt pan insures it to cook more evenly and fluffy.
Step Three: Bake until you can insert a tooth pick into make places into many places and it comes out clean, about 55 to 60 minutes. Start out with 50 minutes and continue to check every 5 minutes. I made that mistake the first time baking this banana bread. When finished, let cool slightly and insert a butter knife to loosen the sides on the inner and outer circle and flip onto a plate. Let cool and cut into pieces. Be sure to serve with butter!
