Easy Sheet Pan Chicken Fajitas

Today I’m sharing my go-to recipe for Quick and Easy Sheet Pan Chicken Fajitasthat I have been making for a couple years now. This recipe is perfect for the working mom or dad that’s exhausted from a long day and just needs a quick, semi-healthy meal for their family. Throw all these ingredients into a large bowl (lets be real, there’s no need to make it as pretty as the picture above) and then dump right onto a sheet pan and pop it in the oven! It’s that easy.

Prep Time: 5 minutes

Total Time: 30 minutes

Step One: Preheat the oven to 350 degrees. In a large bowl, throw all your ingredients together. Add 3-4 tablespoons of Olive Oil (enough to equally cover everything) and toss to coat. Add the cumin, chili powder, garlic powder, cayenne, salt and pepper and toss again to coat everything evenly.

Step Two: Spray a large sheet pan with Pam/Olive oil, etc. Just grease the darn thing. Pour ingredients from the bowl onto the baking sheet and spread out evenly. Place into the oven and cook for 20-25 minutes. While that’s cooking, coat the tortillas with a thin layer of olive oil and each side. 

Step Three: Remove the baking sheet from the oven and place tortillas on top. Try not to overlap them too much. Place back into the oven for an additional 3-5 minutes. Top with desired toppings and enjoy! 

Easy Sheet Pan Chicken Fajitas

  • 1 pound chicken – I prefer tenderloins

  • 2-3 Bell Peppers

  • ½ Red Onion

  • 1-15 oz Canned Corn – Drained

  • 1 Tbsp Cumin

  • 1 Tsp Chili Powder

  • 1 Tsp Garlic Powder

  • ½ Tsp Cayenne Pepper

  • 1-1/2 Tsp Salt

  • ½ Tsp Ground Black Pepper

  • Corn Tortillas (Flours fine too)

  • 4 Tbsp Olive Oil (extra virgin)

Toppings

  • Mexican Cheese

  • Sliced Avacado

  • Sour Cream

  • Lime
