Simple Cherry Tomato Pasta

This simple Cherry Tomato Pasta is one of my favorite go-to easy meals for a weeknight dinner. I typically have majority of these ingredients on hand in my pantry and fridge which is always an extra bonus for super easy cooking. It is quick to throw together, and the family always loves it. Alright, lets get started!

Step 1: Cook pasta according to package directions in salted water and set aside when finished. Reserve ¼ cup of pasta water.

Step 2: Heat olive oil in a medium-large skillet over a medium heat. Add diced onion and season with salt and pepper. Simmer for 6-8 minutes, stirring occasionally. Add cherry tomatoes smashed garlic, chili flakes, salt and pepper and simmer for another 10 minutes, stirring occasionally. Once cherry tomatoes start to welt, press down on them with your cooking utensil until they burst and stir creating a sauce. Add in reserve pasta water and stir. Simmer for another minute or two. Season to taste with salt and pepper.

Step 3: Add in cooked pasta and coat with sauce evenly. Add in torn basil leaves and generously top with freshly grated parmesan cheese and mix well. Salt and pepper as desired. Divide into bowls and top again with fresh parmesan cheese.

  • 18 oz Cherry Tomatoes

  • 6-8 oz Spaghetti or Fettuccini Noodles (Cooked)

  • 1/2 Yellow Onion (Diced)

  • ¼ Cup Olive Oil

  • 4 Garlic Gloves – Smashed

  • 1 Tsp Salt

  • ½ Tsp Black Pepper

  • ¼ Tsp Chili Flakes

  • Fresh Basil Leaves (Roughly Torn)

  • Freshly Grated Parmigiano Reggiano (For Topping)
