Chrissy Teigen's Smashed Potatoes

Next on my Go-To Holiday Sides series is this AMAZING recipe for Chrissy Teigen’s Smashed Potatoes. These mashed potatoes are packed with flavor and oh-so creamy! I probably will never turn my back on this mashed potato recipe for any other for the rest of my life. That’s how good they are. They are great for every occasion and easy to whip together. 

Step One: In a large pot, place the diced potatoes inside and fill with water until potatoes are covered about 3 inches. Salt the water until it tastes good and bring pot to a boil over high heat. Reduce the heat to a simmer and cook the potatoes for about 25 minutes or until you can pierce the potatoes with a fork.

Step Two: While the potatoes are cooking, in a small saucepan, heat the butter, cream, pepper and 1 ½ teaspoons salt and keep it warm over low heat until potatoes are finished. 

Step Three: Drain the potatoes and return them to the pot with the roasted garlic.Note:I like to sauté the garlic in a little olive oil in a separate skillet and then add it into cream mixture. Using a potato masher, mash until chunky smooth. Add in the cream mixture and stir. Add salt as needed. Transfer to a serving bowl and sprinkle with chives if desired.

½ cup heavy cream

½ teaspoon freshly ground pepper
