Cobb Salad W/ Honey Mustard Dressing

THIS. COBB. SALAD. Holy nutcrackers, this salad is amazing. How can a SALAD be so good?? I know, I thought the same thing. But gosh darn it, it is amazing. The combo of the seasoning on the chicken and the unbelievable dressing, makes it for a match made in heaven. Fun fact, my husband despises mayonnaise, so he refuses to put this dressing on his salad (spoiler: it has mayonnaise in it). It makes me actually cringe to watch him eat this salad with another dressing on it. IT’S JUST PLAIN WRONG. This is a great salad to make for when your gal pals come over and they’ll think you’re one heck of a chef. Two thumbs up, Chrissy Teigen! 

Step One: Preheat the oven to 350 degrees and don’t forget to get your hard boil eggs and bacon going. Line your baking sheet with foil and coat evenly with oil. In a bowl, combine 1 tablespoon of oil, paprika, cumin, thyme, salt, black pepper and a pinch of cayenne. Brush the mixture all over the chicken and place on the baking sheet and place in oven. Cook for 15-20 minutes (I usually cook for around 18 minutes). When done, transfer to plate and cut into bite size pieces.

Next, crank up the heat to broil and place corn on the same baking sheet and place back into the oven. Broil for 5-6 minutes till the corn is charred. KEEP AN EYE ON THIS. Girl, it can go south real quick.

Step Two: While your chicken is cooking (or after), make your dressing! In a bowl, (I like to make it in a Tupperware container so I can just pop it in the fridge after) mix together the buttermilk, mayo, honey, mustard, garlic powder, onion powder, oregano, paprika, cayenne, salt and pepper. Pop in the fridge till your ready to use. *Dressing is good for about a week. 

Step Three: It’s salad time! Arrange your lettuce on your plate/bowl of choice. Top with tomatoes, avocado, bacon, corn, eggs, and chicken. Drizzle the mouth watering dressing all over that baby and enjoy!

For the Chicken & Corn: 

  • Olive Oil

  • 1 ½ Teaspoons Paprika 

  • 1 Teaspoon Kosher Salt

  • ¾ Teaspoon Ground Cumin

  • ¼ Teaspoon Thyme 

  • ¼ Teaspoon Black Pepper

  • ¼ Teaspoon Cayenne

  • ¾ Pound of Boneless Chicken Breasts

  • 1 (15 Ounce) Corn Kernels, Drained 

For the Dressing:

  • ½ Cup Mayonnaise 

  • ¼ Cup Buttermilk

  • 2 Tablespoons Dijon Mustard

  • 2 Teaspoons Honey 

  • ½ Teaspoon Dried Oregano

  • ½ Teaspoon Garlic Powder

  • ¼ Teaspoon Onion Powder

  • ¼ Teaspoon Paprika 

  • Pinch of Cayenne 

  • ¾ Teaspoon Kosher Salt 

  • ½ Teaspoon Black Pepper

For the Salad:

  • 1 Head of Iceberg Lettuce, Chopped

  • 1 Cup Cherry Tomatoes, Halved

  • 1 Large Avocado

  • 10 Slices Bacon, Cooked and Crumbed 

  • 4 Hard Boiled Eggs, Chopped
